The shrimp allergy is so mild that I would need to eat an ocean's worth to die. So as long as I don't mind getting hot and itchy...I can eat as many of those tasty little bastards as I want.
On the other hand, day 1 of vegetarianism has gone swimmingly. We went grocery shopping and our fridge is packed and so are our wallets. I made a fabulous salad which I have no photos of but consisted of:
-2 cups cooked chickpeas (canned is fine for the lazy)
-2 cups baby spinache
-3 hard boiled eggs was supposed to be 2 but I had 3 and what the hell was I going to do with the last one?)
-2 tbs plain yogurt
-3 tbs skim milk
-juice of 1 lemon
-1 handful chopped chives
-2 tsp paprika
-a shit load of frech ground pepper
It was filling and there are still leftovers after both of us stuffing ourselves.
So tomorrow I go back to work. It was a pretty good 5 day weekend, all in all. Only 3 work days until next weekend!
